Grilled Lamb Kebobs with Greek Yogurt Marinade 

Ingredients
  • Boneless leg of lamb, cut in large equal sized pieces about 1 inch thick (buy the amount your butcher suggests depending on how many people you are cooking for)
  • Greek Yogurt Marinade
  • Salt and pepper, to taste

Directions:  

In large bowl, marinate lamb pieces for at least 2 hours in refrigerator.   Preheat an outdoor grill to medium heat. Remove lamb from refrigerator about 30 minutes before grilling to bring the meat to room temperature. When ready, skewer the meat being careful to wipe off excess marinade.  Grill skewers, rotating to char lamb on all sides, until cooked to desired doneness, about 7 to 8 minutes for medium-rare.

Balsamic Grilled Chicken and Potato and Onion Perogies

"Stew Leonard's and Trader Joe's special, coming right up!!!"  This semi-homemade meal is so yummy and super super easy.  I found the main ingredients and Stews and Traders so hopefully you have those stores close to you.  If not, I am sure you can find another store brand that works just as well.  

Ingredients:

Directions

Bring 3 cups of water to a boil in large sauce pot.  Add perogies and cook for 5 mins.  Remove and dry on paper towels.  In a large sauté pan, melt butter and cook until it begins to brown ever so slightly.  Add perogies and sliced chicken.  Toss until both are warm and become coated with brown butter.  Serve immediately with freshly grated parmesan cheese.

Chicken Satay

 

 Ingredients:

  • 1 package, chicken tenders
  • 1 container, Soyaki (or favorite teriyaki style marinade)

Dipping Sauce:

  • 1 c rice wine vinegar
  • 1 c soy sauce
  • 1 c peanut butter
  • 1/2 c lemon juice
  • 1 t sambal (found in most asian food sections in standard grocery stores)
  • 1 T chives, chopped 

Directions:

Soak wooden skewers for at least 1 hour (to prevent burning).  While skewers are soaking, marinate chicken tenders (at least 1 hour).  Prepare dipping sauce by whisking all ingredients until smooth, set aside (or refrigerate).  

Place marinated tenders on skewer.  Preheat grill pan or skillet to medium high.  Spray pan with cooking spray thoroughly.  Grill chicken about 3-4 minutes on each side.  Serve next to dipping sauce.
