Camp KO

Summer is here!  In my world, this means just a few things- Camp KO Culinary Camp, Root Down Farm CSA, summer BBQs and and of course all of the traditional summer fun at the beach.  Click on the youtube link below for a "quick glimpse" into some of my early CSA products- roasted spiralized zucchini and garlic ramps.  CSA is a great way for you to experience farm to table and it also helps to force some great clean foods in to your summer diet ;)

RECIPE for Spiralized Roasted Summer Squash and Garlic Scapes

 

  • spiralize veggies (see Inspiralized.com) and trim garlic scapes
  • lay in one layer on foil lined sheet pan
  • season with salt, pepper and olive oil
  • roast at 400 degrees F for 10 minutes or until slightly browned

Given the success we have had in the prior 2 years, we have made a decision to expand the culinary offering at Camp KO.  For the first time ever, we are dedicating a full week to culinary training to be held July 20 - 24, 2015.  This week is open to 20 lucky kids who are interested in eating healthy and expanding their technical knowledge in the kitchen.  There are so many fun things to look forward to during this week including:  learning about kitchen safety and technical cooking skills; meeting local chefs; developing recipes; gardening and harvesting fresh ingredients; hosting a public farmers market!  

 

Here is a glimpe of what we did last summer:

EAT THIS, NOT THAT!!!!  Summer camp season is here!  Like last summer, I am spending a few weeks at the very exclusive Camp KO at Kingswood Oxford School in West Hartford, CT.  Each week, these campers focus on creativity, health, fitness, and fun.  In the middle of their busy day, I get to spend a few hours teaching them how to make healthy choices with snacks and meals.  This year, our focus is on finding healthy ingredient alternatives.  This helps them think creatively about food and build basic nutritional habits.  Here are a few of the recipes we have done so far.  Also, here is an "Eat This, Not That" worksheet to use at home with your kids!.
