Crispy Haricot Vert

These string beans will be a crowd pleaser and they will for sure take the place of french fries, even for the pickiest of eaters.  The recipe could not be any easier too.  


  • 1 package, pre cut and washed haricot vert (green beans)
  • olive oil (approx 1/4 c)
  • 1 1/2 t ground mustard
  • salt
  • pepper


Preheat oven to 400 degrees F.  Scatter haricot vert (beans) on cookie sheet in one layer.  Drizzle enough olive oil over beans to touch each one (note, you will be stirring the beans half way through cooking so don’t worry if all of your beans are not glistening at the start).  Sprinkle beans with dried mustard, salt and pepper.

Roast in oven for 15 minutes or until beans start browning and become slightly crispy.  Be sure to stir beans a couple of times throughout cooking so they become evenly coated with spices and olive oil.  Serve immediately!
